They sell slices out of this bad boy for $6 a slice. Big f'ing slice though, about 1/6 of a medium pie.

Wood fired, on a trailer. Looks like a pile of welded angle iron and some fire brick.

I didn't take pictures of the vent/chimney. My thoughts are that such a setup can be home-made with a cheap welder, some angle iron, fire brick and mud. The oven obviously is the important part, but that can be prototyped and rebuilt with little more than hammers and mud. It may take a few iterations to get right and learn how to use it, but the material cost is low. A good oven can probably be made without a huge amount of money if plenty of time and passion is thrown at it.

I'll do the engineering and throw in some labor if you move to Seattle and pay me with pizza.

By the way. I inspected that pizza oven again today. No chimney, just a dome with a hole in it. All the smoke comes out of the one hole. That damn thing must get super hot as their pies are super thin yet have distinctive and appropriate layers of crispy and chewy crust while getting the right amount of browning on the toppings.

The Kids wanted Pineapple and Ham pizza and were willing to pony up for the ham. I bought pre cut pineapple and grilled withBlack pepper, Tamari soy, and franks. I finished them with brined and drained red shallots minced. $50 of Serrano ham sliced super thin. Black Olives chopped in crazy spirals. Super cheesy and delicious. Cooked on the grill in a Iron pan. Came out pretty awesome if I do say so.

Shes a bigger girl. My friends nicknamed her Moped. I always hated that. Amazing alcoholic in the good way. She is kind of slutty in the bad way.... I would not recommend....

Do you oil the pan or do anything else to it? I may just get a grill for pizza.

Place around the corner nails their crust. They seem to dust the pan or something with corn meal. The crust texture is perfect. Unfortunately they use some strange spice blend in their sauce that I can neither pinpoint or enjoy. Seattle generally has crappy pizza but, usually because the crust is wonder-breadish.

Baked the extra sliced Pineapple instead of grilling them. Used Carando Hard Salami instead of expensive Ham. The Salami got all crisp and bacony. Delicious.....

Could go with duck bacon or prosciutto - marketable to people for greater sustainability than pork, popularity of duck fat in food culture, and approved for superstitious Jews and Muslims.

I have access to high quality fowl. I am going to give duck bacon a whirl.... I made a duck fried rice for my dad with leftover chinese duck once.

It's not cheap at the store, but I've had duck bacon and it was good. Can save the fat for other things afterwards. A nice rare juicy duck breast is amazing:

This is not a taco thread.

Thin crispy crust, spinach, mushrooms and fresh garlic. I used to live across the street from Angelo's pizza. Like 30+ years in a take-out only spot the size of a garage. To this day it's my favorite pizza anywhere.

I like a pepperoni and good Italian sausage, but spinach mushrooms and garlic is the winner.

Do you wilt the spinach before you put it on the pie? What kind of shrooms? I get Cento Marinated Mushrooms in a jar. They are top notch. I use their hot banana peppers also. Hugeass jar for $2

A week later and the No4 special for $15 has duck breast on it. Perfect crust but made in a gas oven.

"Roasted Garlic Bechamel, VT Goat Cheese, Duck Breast, Charred Red Onion, Arugula, Honey, and Thyme"
