The only thing your method will do is replicate the lacing on the wheel. The truing is all in the tension of the spokes so you do need to re-true it, either yourself or a mechanic.
If you are running skater shoes means you are using flat pedals. If you are staying with flats get some 5.10 shoes. There is no other way to go. The benefits from regular skater shoes is the rubber, super sticky. You will be glued to your pedals.

I test rode the HT, liked it but I am not sure my back or my kidneys can handle it. Trails here in the PNW are not smooth at all. Lots of roots and rocks. I know I want the Epic, because with the brain is like pedaling a HT but absorbs bumps, but is a huge difference with the HT in price.

How do you like that AM set up with the Minions and the HR? I was planning on doing it. I am in the PNW, so we get from dry to wet muddy trails. I want something grippy, that gives me confidence on the turns but at the same time that are not crazy slow.
I was planning on getting some 2.35 Minions for my all mountain ride, but I don't like the idea of them being narrower. What do you guys think? I want something with lots of grip but good rolling resistance, I know you have to compromise on either side but what would be the closest thing.
