Of course they do. Lip and landing determine how a jump rides, not the fact that there is or isn't dirt in the middle. As a noob myself I wish more spots were built with tables instead of gaps but I know that requires a lot more dirt.
That is beautiful. I'm not even old and I think so. Something like that is what I think is the perfect line: lots of options, all rollable while being pumpable or jumpable, flowy and no gap jumps with vertical walls on the front side of the lander so that beginners can work their way into it...
I would dig out the little hill to the level of the rest of the approach and use that dirt to make a roller that would give you a speed boost into the step up lip.

I bought a cruiser to start learning to jump on, but at 6'6" I felt like the bars were way way too low and I kept crashing over the bars. I ordered a 26" DJ bike today that I think will really help. CMC had also recommended I try some higher bars on the 24 and I'm really glad to see this thread...
