The minion front and highroller rear sounds like a good pair for DH. But for my hardtail, highrollers are good for everything (dh stuff and even street).
Nevegals rock. I often use a 2.7 in front and 2.5 in back. Sometimes I toss on a BG 2.5 in the front. I have not had much of a problem flatting. I had one day this year where I flatted 2 or 3 times...no flats besides that on Kendas.
The 2.7 is HUGE. The only tire that comes close is a Michelin 2.8, which seems the have a higher volume but narrower tread.
