blue mountain brown stewed chicken

ingredients:
2 whole chickens cut up in small pieces, no smaller than a wing.
2 tsp. dry jerk seasonings
2 scallions
1 clove garlic
1 onion
6 large carrots
3 stalks cellery
1/2 red pepper
1 scotch bonnet pepper, seeded[use latex gloves!]
2 cups fresh green beans
4 sprigs fresh thyme
2 spoons wet jerk marinade[busha brown, grace etc.]
5 shots grace hot sauce
1/4 cup dark soy sauce
1/4 cup browning[kitchen bouquet]*
1 tbsp brown sugar
1 cup blue mountain coffee
2 tbsp flour
2 tbsp peanut or cocconut oil
1 lemon and the zest
-wash cut up chicken, season the bird[dry jerk seasoning]and squeeze the lemon all over it. Drain and discard the liquid.
-pat dry and sprinkle with flour and brown the chicken in the oil.
-turn on convection oven to 300 or regular to 325
-transfer the lightly browned chicken to a large deep baking dish
-peel carrots and slice in 1/2 inch rounds and throw onto chicken
-dice the celery, onions, green beans, scallions and red pepper and toss into pan
-finely mince the garlic and the scotch bonnet and put in a bowl.
-add the soy, browning, sugar, hot sauce, coffee, jerk marinade, lemon zest and any other things you desire to the bowl and mix the marinade well.
-pour the marinade into the pan and stir the entire pot till it is all coated well and toss into the pre-heated oven.
-cook 2 hours in a convection or 2 & 1/2 in a regular oven.

serve with coleslaw and rice'n'peas....maybe some corn on the cob

edit...kitchen bouquet is made from veg and is flavourfull unlike most brownings that are caramel and water
