I an very happy with my Calzones. I use old dough that normally gets tossed at the end of the night. I always use the ricotta left over from the day before. Tonights offering had Bacon, Onions, Marinated shrooms, Banana Peppers, Ham, and a few black olives and handful of fresh mozzarella. We all finish our Calzones differently, I egg wash mine and put vents so the cheese oozes out on to the crust. I use Parmesan and oregano on the crust also. They don't sell and nobody orders them except the staff. But they are so good.....
