So if I fully encrypt a laptop internal drive, the whole shebang, but I want to plug in a NON encrypted external drive and pull pics, videos, etc off the laptop card reader and copy them to that drive, will it just "pass through" the files to the external drive without encrypting them?

Yes.

Full drive encryption only happens on the drive you've set it up for; The files aren't encrypted after you pull them off the drive.

I actually really like Windows Bitlocker. It's easy to use and integrated right into the system if you have a Windows version that supports it.

Ultimate and Pro versions only.

Truecrypt is open source, heavily peer reviewed and completely cross-platform.

And free.
