Good night before pasta sauce?

I made this last night and it's tastes awesome. Seems like it would be a good sauce for the night before a race or big ride since you can get a lot of carbs from the pasta and small amount of protein from the chicken.
I'm not the most educated when it comes to nutrition though, anybody have comments?


Chicken-Cilantro Pasta Sauce
Serves 4
1 lb chicken-cilantro sausage, casing removed
1–2 TB organic extra virgin olive oil
1 onion, chopped
1 – 14.5 oz. can organic tomato sauce
1 – 15 oz. can chicken broth, low sodium
1 bunch fresh cilantro, chopped
black pepper to taste

Ready in 30 minutes!

Sauté chicken sausage and onion in as little oil as possible.
Add chicken broth and simmer for 15 minutes.
Add tomato sauce; stir and cover; cook for 5–10 minutes.
Turn off heat. Add cilantro and black pepper and let steep for 5 minutes.
Serve over pasta, rice or couscous.
