Lime/garlic chicken

I'm waving. Can you see me now?
I just made up a recipe with the food in my house. :like a boss:

The Marinade:

2 limes
2 cloves of garlic
cilantro
salt n peppa (kosher salt)
sriracha

using 3 pieces of chicken
Then grilled them

Then I threw a chopped up potato with olive oil, salt and pepper, and Cheyenne pepper flakes in a pan and cooked.

I had no green vegetables, so I made a salad on the side.

Let's keep in mind I am 17. I feel accomplished. I now command respect.

For being 17, that is pretty good. I been doing a similar recipe for years. Here is a little hint... MORE SALT

Also, every 5-10 min take the chicken off the grill and re-dip in the marinade. This will keep them a lot juicier.

Mine did turn out a little dry, but they were kept juicy by the marinade. Thanks for the tip though. I will have to make more marinade next time.

Recipe sounds a pretty good "thrown together with what I had on hand" one,
try adding some lemon grass and fresh sliced chili (one of the long thin Thai ones) or amybe a touch of fish sauce, and finishing the dish when you serve with roughly chopped plain roasted peanuts sprinkled on top. :thumb:

I never thought of the lemon grass. Sounds like a good suggestion. Thanks! :thumb:

I'd also add a tiny bit of julien'd mint to that. Nothin like that mint-cilantro fish-sauce combo.

If it works well on Bun-Tom thit nuang cha goi, it has to work here as well!!:thumb:
