2 lbs of spicy Italian sausage. Chicken, Turkey, or Pork. I prefer Pork... Either way if it is not red, then you need to make it red. Cumin and Red Pepper will do the job. Paprika and white pepper will also do the trick. Chop a small red onion very fine (3/4 cup or whatever, you can never have to many onions...). 1 cup of Panko breadcrumbs in the mix, 1/4 cup of parsley. 1 cup paremsan. 1 egg in the mix and 2 for dipping. Mix in a bowl until a meatball consistency. Form into balls like a meatball. Dip the balls into egg then breadcrumbs. Fry in Vegetable oil covered, medium until golden brown (about 10 minutes). Serve with Boss sauce or marinara. Internal temp 160f. Do not drain on a paper towel. Use a rack so they cool evenly. You can bake them also. 400f for 25/30 minutes.... You can also push a whole in the ball and wrap a piece of Provolone or Gorgonzola in the middle for cheesy joy.
