suggestions for the most simple, easy to use interface, least amount of crap?

I may go to plan B here, and set it all up on my end. Looks like you can set some of them to send/receive from other accounts.

Gmail.

Completely clean interface, can be set up for free to send/receive via a POP3 client like Outlook, fast, and very little spam.

Go Gmail. PM me an email address for an invite if you decide to go that route.
