Hey just wanted to say that I made a Splenda pumpkin cheesecake this weekend. Oh man, this thing is awesome. Easy to make (like all cheesecake) and if nobody told you, you'd never know it wasn't made with real sugar.

Also made some splenda oatmeal raisin cookies, and chocolate chip cookies. Yum!

Excellent! I had some splenda cheesecake and didn't know the difference until the cook spilled the secret. I've made some for my father too (also diabetic) and he didn't know the difference...and I'll never tell ;)

because my lame diabetic ass can't handle real sugar. By using splenda I can endulge my sweet tooth again instead of worrying if I'm going to go into diabetic shock.

And so far, everything I've made with splenda so far has been unidentifiable.

I made one too but it was from the "lowfat specialist" section of the Seattle PI. It used ricotta instead of cream cheese.
It sounded better than it tasted. Can't say I'd do it again.
I made a regular pumpkin pie yesterday and served it with bourbon sauce. It rocked the church. Both recipes were from "The Joy of Cooking".
One secret to a good pie is you gotta make the pie with fresh cooked sugar pie pumpkins.

we ate the pumpkin cheesecake this thanksgiving as well. My dad, the diabetic, devoured his portion. My mom feels that using all splenda for the cheeseake would produce an off-cheesecake texture.

I dont know how the texture of yours turned out, but if it left something to be desired, try half sugar, half splenda. We made ours with normal sugar. and my dads lame diabetic ass just injected some extra insulin to prevent going into diabetic shock Diabetes is really a managable disease if you stay on top of it.

try using half of the recomended cream cheese and sub mascarpone for the other half...and tad more cornstarch. Creamy!
