One of the wheels on my new wheelset has off-color spokes. I'd like to pull them off one and at time and replace them in such a way that I do not have to re-true the wheel or take it to a shop.

Is this possible or does a change like this require a mechanic?

The only thing your method will do is replicate the lacing on the wheel. The truing is all in the tension of the spokes so you do need to re-true it, either yourself or a mechanic.
