Can someone tell me if I can use a 25 tooth front sprocket and a 12 tooth back (I don't now the names sorry!) and how hard it will be ride ride, eg fast start lower top speed? Thanks.

with 26" wheels, 25/12 is a medium gear. most dirt jump riders pick a ratio that is in the 55-60 range of gear inches.

Just for reference, last time I had a 26" bike I ran 25-12 and spun out way to easy. I bumped up to 28-12 with my latest build and it feels much better. Personally, going to a 30 would probably be fine as well, but the 28 seems good. Honestly, if you haven't bought yet, don't go as low as 25, way to fluffy.
