Fish Tacos

All this talk of "tacos" made me wanna fix some FT for dinner tonight. Anyone want to divulge their recipe? I make themm with talapia or Mahi, but lately I have been wanting a different sauce..

You could do ceviche tacos! They the bomb!

* not my recipe, but it's a good one. (I use tuna)

1 1/4 pounds very fresh (sushi-grade) fish fillets (such as tuna, hamachi, barramundi, or mahi-mahi), cut into 1/2-inch cubes
Fine sea salt
Freshly ground black pepper
3 tablespoons fresh lime juice
2 tablespoons fresh lemon juice
2 teaspoons sugar
1 cup chopped seeded tomatoes
3/4 cup chopped red onion
2 tablespoons sliced pickled jalapeño chiles from jar plus 1 tablespoon liquid from jar
1 tablespoon olive oil
1/2 large head of romaine lettuce, very thinly sliced crosswise (3 to 4 cups)
1 large avocado, peeled, pitted, diced
3 tablespoons chopped fresh cilantro
12 purchased crisp taco shells (Soft tortilla's work fine)
Purchased salsa



Place fish in medium glass dish or bowl; sprinkle with sea salt and freshly ground black pepper. Add lime juice, lemon juice, and sugar and toss. Cover and chill until fish turns white and no longer looks raw, tossing occasionally, at least 4 hours and up to 6 hours.

Strain fish, discarding marinade. Place ceviche in large bowl; add tomatoes, red onion, pickled jalapeños, 1 tablespoon liquid from jar, and olive oil and toss to blend. DO AHEAD: Can be made 2 hours ahead. Cover and chill.

Add lettuce, avocado, and cilantro to ceviche mixture and toss. Fill taco shells with ceviche mixture. Top each taco with large spoonful of salsa and serve.

We use local cod or haddock usually.
Either beer battered or grilled.
For a sauce try sour cream and siriacha or cholula mixed to taste.
Shredded cabbage, squeeze of lime and a quality corn tortilla and you're good to go.

Fvck, now I want fish tacos.

I don't really have a recipe per se. I just grill whatever fish we've got (usually tilapia because we have the nine pound Costco freezer bags). Thaw the fish, season with a Mexican rub, grill until cooked, shred with two forks. I top the tacos with fresh hot salsa from the local expensive grocery store, taco sauce, cheese, and guac. I prefer hard shells and the wife likes the soft ones, so I heat both.

This but I would use tilapia or grill or blacken a firm fleshed fish with a nice rub. Siriacha or chipotle mayo also pairs well with the cabbage.

Quick and easy: Dry fish and lightly sprinkle both sides with lime juice, salt and cumin. Then heavily sprinkle both sides with chili powder and garlic powder. Bake in 400 degrees oven up on a rack so the spices don't come off.

The grilled chipotle fish tacos from across the street at Nachos and Beer are tit-tastic. Not as good as the Chorizo Torta...but whoa nelly!
Papas does have great FT. I have only been to the one next to Kmart .

Where is nachos?

Across the street from my office on Hwy 74 in Reynolds. The old 50's style diner. He used to work at Papas and Beer, so you will love.

I was let in on a little secret by his wife on the Chorizo Torta. Her absolute fav...and I tend to agree is the Tacos Alambre. Grilled, marinated pork, steak, chorizo, mushrooms & onions. :drool:

Sorry, just got back from that town I rave about, Rocky Point, Mexico, and had some of the best shrimp tacos I've ever had. Makes me want to go back already.

And if anyone here ever wants to visit Rocky Point, let me know, and I'll direct you to my parents. Yep, shameless plug......
