When you drive west across Kansas, you gain eight feet of elevation per mile.

Technically, Kansas is not flat.
A plain is flat. An inclined plain is still flat.

However, Kansas still must follow the contour of the earth so statistically it is best described as a spherical rectangle.

Since I am not as good at math as you might be. Could it be possible that the 8ft/mile ratio might be enough of a elevation rise to overcome the spherical aspect of the rectangle from east to west?

i always just thought god had sliced off that part of the sphere, rendering it flat, in a attempt to clear the planet of that portion of the population.

Well the locals probably still think the earth is flat so you may have something there.
