Nowhere Man!
1 lb Cucumbers, diced.
1 lb fresh ripe tomatoes, seeded and diced.
1/3 cup minced onion (optional)
1/2 cup minced fresh parsley.
3 tbsp extra virgin olive oil.
3ish tbsp fresh lemon juice.
Salt to taste (I use about 1/2 tsp)
Black Pepper. Not a fuck ton, but just a little.

Extras
A little mint is nice. Not a fuck ton, but just a little.
I get these spicy peppers from Italy. They are basically Cherry peppers. Throw them in if you got them...
A little honey. Not a fuck ton just a little.
A pinch of ground Sumac.
Fresh Spinach goes well and makes a great neutral filler. Sometimes you need a lot quickly. Source of Iron and all that nonsense....
The version we ate had a kind of small pasta in it. I have no idea what it is called or where to get it. My version had Orzo. (1/2 cup goes far..)
Tuna and Salmon go well with this also.

The more you let it sit the betterer it is. After a week or so the Onions and garlic get soft and mushy and everything gets infused. I feel rejuvenated after eating it. Serve it on Falafel Waffles to make the magic happen. Chick Peas are my new favorite food.
