I'm 6'3 and ride a medium Devinci Wilson. I really love the ride - slack Head Angle low BB, 7-9" of travel and it is available in a Large that has a 24.5 TT. The Medium fits me well but I like it snug. I totally think a Large would fit you well.

You can totally use a different hub. The DT 340 will work, you will just have to use the Saint axle to mount the derailleur. Lots of people have done this with Formula hubs and any other Thru Axle hub.
Whistler for the week before Crankworx - the trails are in primo condition as they groom them for the week of crankworx. I went last year for the fesitval and to ride after and the trails were in really rough shape due to all the riders. If you can stay for crankworx as well, it's a blast!!

I would say keep the caliper and get a larger rotor. I have XTR calipers on my trail bike and I put a 180 rotor on the front - it's awesome! You can go 203 as well.
If you go with a REBA and want to stick with your 160 rotor you can use the Shimano adapter for IS to Post.

Nope. Saint isn't hub specific. As long as you have a 135x10 or 150x12 you can use a Saint Rear D.

That would be completely pointless. The whole reason for Saint is to elimate the derailleur hanger. The strength in the Saint derailleur is in the fact that it is mounted to the hub axle. I've been running one since day 1 and it's flawless. At least in 07' they will have a regular spring...
The big difference being that when you drive 6 hours (to go to a race) you've gone through 6 countries! :) When someone here (Canada or US) drives 6 hours it barely gets them out of the province/state!!
