What your proposing does not make sense.
The newer Saint 810 levers will work with older XT 760, 756 or 755 calipers.

its funny how riders will happily ride a frame thats a 1lb or 2lbs heavier than another because of a superior suspension and stiffness but wont accept a similar weight penalty for a superior performance from a fork.
I own the Avalanche DHF7.5 and DHF8.5 they are around 8.5 and 9lbs.
I think the DHF7.5 is by far the best value fork on the market at $999 2/3rds the cost of your other options.

The Demo is pretty progressive anything that shortens the shock length will compromise the suspension as it will sag further into the stroke where the suspension rate ramps up...

The setup was a tad soft but the Avy stopped it from ever bottoming harshly.
You should definitely be on a 500lbs spring.
