that new crankset you ordered wont make too big of a difference. 28-38-48 sounds good. mtb cassettes do have big changes in between each gear so keep it tight and stick with road
harder gears are great for developing tendonitis too. most stock road bikes i see are geared way too high.

Hadley's have 108 point offset pawl engagement meaning only 1 pawl engages at a time
King has the Ringdrive, a 72 point engagement which is slower but probably a low more solid, especially with the steel trials freehub body

514mm (20.25in) axle to crown is pretty high and Chomps is right, your head angle must be pretty slack without any sag
You have 1.125 inches of bottom bracket drop while a 20 will have at least 1.5 inches of BB rise
What CS length setting is your wheel in? I'd suggest the shortest setting...
