Yeah, it's in Kellogg, ID right along I-90. You are right that we had to ride paved bike path a bit, forgot about that part. Maybe my memory is fuzzy, or maybe I was in better shape both physically and mentally, but it felt like the trails were built better and I enjoyed the park more.

My last pair of Teva Links are on life support and I was in need of a new pair of riding shoes. I liked the old Impact, except for the fact that the soles peeled off after a couple of rides, so I figured I'd try the new Impact Pro Mid.

I imagine it'd be challenging on rims with shallow depth/side profile, such as Stan's Flow Mk3.
We haven't had much issue installing Cushcores on most DT rims (FR570, EX471/511, etc). Not sure about Rimpact but Cushcore stretches after a while, which makes it quite a bit easier to install...
I think it would work reasonably well for your stated purposes. It's not 100% guaranteed protection though, so don't go out riding at 17 psi in the tire right after you install an insert.
