Does anyone know if I will need a special mounting adaptor for my 8" Avid Mechanicals for my Manitou Sherman?

I needed one when I installed an 8" rotor for my Juicy 7's onto my Minute 2. I think since the rotor is bigger you need to move the caliper farther away from the fork. I am sure someone else can give you a more educated answer though.

Yeah, you're right, and for that reason.

Can you use a Hayes 8" manitou adaptor for an avid? I think I've heard of people doing this, but I wanted to make sure.

Yes. Hayes and Avid brakes are both designed to work the same way with the Manitou post-mount system.
