Another easy fast pasta sauce

In a van.... down by the river
This one is called "Pork & Carrot Ragu":

5 oz. of butter
2 medium onions, finely chopped
3 medium carrots, shredded/grated
1 lb ground pork
2c beef stock
3T tomato paste
salt & pepper to taste

Melt butter & saute onions until soft. Turn up heat & brown pork. Throw in carrots and saute 2-3 minutes. Pour in beef stock & paste. Bring to boil, turn down heat & simmer until thick-ish. Serve on cooked pasta. Top with freshly grated parmesan/grana padano.
