You should go to the shop and ride it, starting with the "small". The Cake uses a wonderfully long top tube, so you're going to have to size by riding.
I just had a Maverick order cancel, so I'm looking at the Cake 3, too, but to strip and rebuild with the drivetrain I've got waiting. All the Cake frames are identical, except that the disc brake-only versions have aluminum seatstays and no canti-bosses, so it's a very "upgradeable" platform to work with.
