Actually they worked just fine for me, I ran all last season this way on both the 823's and 817's. Its the UST Highroller's that liked to blow off the rim. Most every non tubeless Maxxis tire I tried worked great, single or double ply.
Running Maxxis non-UST Larsen TT 2.35 on Stan's set up Mavic EX729s mounted to a Turner Rail and they have held up fine. Not too crazy about the tires though but thats another thread. That really doesn't answer your question though, does it?
I've got a 2.35 highroller and minion running tubeless with stans on a Bontrager tubeless rim. It seems to take more stans sealant than other tires I've used, and need more frequent refills, but other than that it works fine.
I ran 2.5 Minion's/Rhyno Lite w/ Stan's at Snowshoe this past weekend with ZERO problems, so with a UST rim it should work even better.
Also, here is a list of tires (I can remember) that I have used with my EX823's and Stan's goop (all NON UST).

ive used all sorts of maxxis dh tires with stans and ghetto tubeless setups on all sorts (i repeat ALL sorts) of rims with a quite good success rate.
only times ive had trouble is with 2,35 single ply on skinny rims but thats not your case.
worst case scenario for you would be to have to rig a rimstrip inside that ust rim.
I have a friend that is running non UST Minions on his Deemax UST rims (w/ Stan's) who loves the setup - in fact he seems to have had less problems with his setup than I have with my UST rim / Hutchinson UST Octopus setup

I have D3.1's with non- UST Minion 2.5's with Stan's and I have never had a single problem - no flats, no problem getting them to seal, nothing but smooth riding (btw you really have to put lots of soapy water on the bead before inflating - or you probably won't be able to inflate - also important to periodically refill some Stan's goo or the bead will dry out and loose air)
I also have the X3.1's with single-ply non- UST Minion 2.35's - no problems there either
and finally I have Rhinolytes w/Stan's rimstrips and 2.35 Minions - dirt jump on those and no problems...
ok so I'm new into the MTB scene again(was out of it for a few years and missed most semi recent developments) and havn't heard of stans. but from what I've read I tihnk maybe I could try tubeless. I have Sun Mammoth rims and will be running different MAxxis tire combos 2.5". could I get away going tubeless with stans. seems like that would be awesome to not worry about pinch flats and not have to buy specific tires and rims.
I started out the season on 321's with Stan's and the medium width strips and Minion 2.5F's in super tack. It worked OK but now I am using tubes why? Because Denting the rims caused them to go flat which I manged to overcome with major headache a couple of times, and I kept forgetting to put fresh sealeant in the tires regularly so I was the guy at whistler filling up my tires after every run. After Idaho I dented the rear rim beyond tubless compatibility put a hole in a brand new tire on the first run that was too big to be sealed with sealant, and the front went flat for now good reason, I stopped running Stan's. I have seen others puncture Maxxis's rather easily too, which doens't jive with Tubeless tires.
