Alright, after years of being terribly frightened of beans/most peas, I have finally decided to give them a go again, and have become addicted. I've done red beans and rice, refried beans, beans and pasta, purple hull peas and ham hock. Who loves beans? Give me some good recipes. Thank You.

i love this one, a definite hot weather staple.

white bean salad.

take a couple cans of white beans (i usually use Goya, either cannelini, great northern, small white, or a combination), rinse well

toast some cumin and coriander seeds in a small skillet

let cool and crush in a mortar/pestle

chop some scallions, red onion, shallot or vidalia (your choice)

chop some red pepper

chop some parsley

dress w/ olive oil and freshly squeezed lemon to taste, and mix everything together. add S&P.

In a van.... down by the river
Baked pork chops with beans:

4 1/2" thick chops
1/4 c minced onion
minced garlic
1t br sugar
1/2t dry mustard
2 lbs of whatever beans you like
1/4c ketchup
2T vinegar

Brown chops slowly over med/low heat (20 minutes). Remove. Cook garlic & onion until tender. Stir in br sugar, mustard, beans, ketchup, vinegar. S&P to taste. Pour in 2qt casserole. Arrange chops on top of beans. Bake ~45 minutes.

Serve with a nice pinot noir.
