Can you mount V brakes on u-brake mounts?
If not, is it Ok to run U's with no Oryg?

No, you can't run v-brakes on 990 mounts because 990 posts are further out from the hub (opposite side of the rim). You can run your U brakes without a gyro. They are easier to maintain and tune if you eliminate the gyro.
