Brining a bird right now.

in an apple cider brine I made last nite. It will the be the bomb & nothing less. the brine makes the chicken so juicy & tender.

Brine.
3 qts. H2o
1 qt. apple cider vinegar
peppercorns
bay leaf
1/4 salt

boil, let cool, soak bird for 24 hours.

cook until done (cant remember oven temp or cook time).

anyone want to suggest some vino?
we are going to have mashed pot & probably a veggie or two too.

Hmmmm...... is it oven roasted after the soak? Maybe a nice Pinot Noir? Maybe go with balsamic/rosemary roasted potatoes instead of mashers?

I was thinking a Pinot too, simply because that is my fav at the moment & I have a bottle from Arkansas my brother just brought me but I have been craving an oaky chard too & I think that would go with the savory-ness of the cicken.

Pinot will go well. You could probably also go with a Beujolais or even a Chianti. Or Barbera d'Alba. I find Barbera can go with almost anything.....

Here is the one I use;

1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1/2 tablespoon allspice berries
1/2 tablespoon candied ginger
1 gallon iced water
