Calling all monkies (recipe requests: fast and easy)

Though you said quick, here's one for bagels--

1 1/4 cup 110* water
4 1/2 cups bread flour
3 tablespoons sugar
1 teaspoon salt
2 tablespoons veg or olive oil
1 tablespoon yeast

Mix yeast/water and let stand for about 10min until mixture is bubbling. Mix flour/sugar/salt/oil until blended, hopefully with a KitchenAide mixer or hand mixer with dough hook. Add yeast mixture, and blend until a smooth-ish ball is formed. From this, make 8 dough balls, and form into bagel shapes. Put in a casserole dish that you've rubbed olive oil to prevent sticking, cover with plastic wrap, then leave in fridge for 3-4 days. When ready to prepare, take out of fridge, allow to proof to room temp, and get a pot of water boiling. Once boiling, put 3 bagels in at a time, and boil for about 1min on each side. Take out, let drain, top with topping of choice, and bake in a 475* oven for about 20min.
