One of my favorites. MA monkeys might remember the Gingerbread Construction Company (in Lexington, Woburn, Waitsfield - I think). They had wonderful carrot cake muffins. I didn't see them around the last time I was in the area, though.

carrot cake w/o walnuts is an abomination to all things confectionary.
even my bf who hates nuts in baked goods recognizes that the only way to have carrot cake is with nuts.......
