Assuming the BCD is the same, will other brands of chainrings fit on my '03 XT crank? Thanks.

Maybe not. I had a hard time putting a single ring Truvativ DH on 02 LX which looks the same as XT. Had to file down the cranks and gear awhile to get it on

By and large yes. There are times though when a little grinding or spacing with a thin washer might be needed to get things to work.
