Talked to the wife about it this morning since it's her family we're having dinner with. I got the green light. Review to follow after the meal has been had.
I did our turkey that way too. Most awesome bird ever. I sorta combined the "zuni" chicken and the bacon bird by seasoning with sea salt and fresh black pepper, some nice hand rubbed sage 3 days ago. I stuck it in the oven a fairly high heat...around 450, for 30 minutes then cut the temp back to 375 for 45 more. Added bacon, 45 more minutes, basted real good, sampled small piece of bacon...45 more minutes, pulled it, let it sit for about 30 minutes. Then proceded to watch my fam and friends destroy it.
As soon as things settled down, I deglazed the pan with a little stock and threw what was left of bacon wrapped goodness in to a pot to simmer for a couple hours...some nice turkey vegtable soup for dinner tonight.
The best part was taking some of the pieces of turkey skin that was left over, heating up a pan, a little bit of bacon drippins and crisp a piece of the skin sort of like cross between a tater chip and a pork rind..heart stopping goodness...
