Yup, like HAB said. The cleats come with the pedals. They should all be two hole to fit pretty much any shoe, with the exception of the odd roadie setups.
Just be aware that shimano offers two kinds of cleats, a uni-directional release (051 IIRC) and a all over the fvcking place release (056). I have ridden the 051s since the beginning of time and am totally used to them as they provide a more locked in feeling. Mistakenly bought the 056s earlier this year and chucked em after one ride, they released every single time I didn't want them to. The pedals should come with the 051s.

Hmm. Well they didn't specify which I was getting. I ordered the XT pedals, so hopefully they send decent cleats for AM style riding...
I guess they can't possibly cost too much, right? At least I'll have some to use right out of the box. I'm currently just beginning to embrace the clipless, and have cheapo touring shoes (uber flexy) and CB Candies. Not a great setup.

The 051s are the stock cleats. They just sell the 056s for people that can't deal with regular clipless or something. Not really sure why they exist. They really should just go choke on a bag of dicks, die, and then choke on another bag of dicks just to be sure.

I had a similar experience to above. Rode them once, basically spent 95% of the ride with at least one foot flailing in midair trying to find a pedal. I must have looked like I was having a seizure.
Well, my current crappy setup feels like I'm wearing dress shoes and standing on a cue ball. I've only actually unclipped accidentally twice, but the level of concentration to keep my feet in was not pleasant.
My experienced clipped buds swear that the stuff I've bought will change my life.
Lulz. Good shoes and pedals do help a lot. I'm kind of a full blown clipless whore at this point, with 2 pairs of Sidis, and haven't ridden flats, even for DH in probably 8+ years.

Yeah no point going full retard until you know you're going to like it. My right foot is all kinds of fvcked up so I need shoes that are 1. mega stiff and 2. fit really well, hence the Sidis. YMMV.

The Shimano pedals offer the most locked in feeling of the big three as they have the least amount of float. Personally I prefer that as I don't like having all of that float to get through before I unclip. You shouldn't have to try to stay clipped in, just like when the time comes, you should have to try to clip out. It just happens.
