Well I know true 3.0 and 2.8 tires fit most forks but some forks fit better with different tires.
Dorado's and shivers can use anything, doesn't matter.
Super T's/Junior T's/Sherman's I'm guessing might have trouble with a 2.8 let alone a 3.0. I know a 03 super T has a hard time fitting a Intense 2.7. It fits, just doesn't give you much room flex wise to the fork arch. The problem isn't so much fitting it, it's making sure that the tires can move around without rubbing or worse off, if you put the front rim out of true (just a little) it'll bind or stop on the front forks.
I thought I was safe with my frame and using 2.35's in the back until I realized that there was next to no clearnce. I now know only to run 2.25 and below. It was a sucky wake up call when I got a 2.4 and it wouldn't fit after I thought it would.
Look for some pics of people and shermans. I tend to find pics of 2.8's or 3.0's on the post pics of your hardtail post in the DH fourms.
