What's the difference between xt and deore levers? Can I use deore lever on xt caliper? Will there be any difference in performance?

All shimano Hydro levers utilize the same sized master pistons. You can swap them around no problem, to any lever/caliper combo, but you may need new hydraulic lines with the right connection, be that straight or 90 degree banjo fit.

Thank you. Will I notice any difference in performance of the brake? XT levers are much more expensive than deore, so I expect there is some difference...

No difference in feel. The higher model levers run metallic bushes at the pivot, whereas the lower model levers run a plastic bush. This won't change feel, just increase the longevity of the lever
