i've never cooked eggplant before but this year's farm share has changed that. the first go-round (simply oil/salt/pepper > grill) wasn't all that great.

last night i marinated thin (~1/4") slices in a oil containing minced basil, arugula and garlic, and then grilled on low heat for ~10 min.

much better.

Thinly sliced, best quality xv olive oil (quite a bit too), good salt (like Maldon or Sel de Carmargue), ground white pepper, finely chopped fresh rosemary, thyme & garlic.
Grill.
The thing about aubergines (eggplant) is to use the best quality seasonings & oils.

My favorite recipe. Not the healthiest, but yummy none the less.

2 medium chinese egg plants
3 eggs
salt, pepper, garlic, olive oil

roast eggplants unpeeled till very tender
beat 3 eggs lightly, add minced garlic
peel roasted egg plants
smash flat
light olive oil in pan
add egg plants
pour egg/garlic over eggplant
salt and pepper to taste
serve over brown rice

My garden is spitting the stuff out like weeds, I cant give the sh1t away. I Did eggplant parm the other night, I tried the grilling part but it was sh1t. Deep fry it.

LOL.... I made a GREAT eggplant dish over the weekend.

Grilled stuffed eggplant:

Stuffing
Brown up some hamburger or turkey (maybe a half pound?)
Saute with an onion and garlic
Add a small (4oz?) can of tomato sauce and 1/4c ketchup.
Salt, pepper, tumeric, cumin, allspice and if you have it, Sumac.
Add 1 can of chicken or beef broth
1.5 cups diced greenbeans.... Boil till the beans are tender and the mixture is a sloppy-joe consistancy.

Mix with 2 cups cooked white (or brown) rice.

EGGPLANT
Cut in half (end to end) & scoop out most of the seeds and guts. Soak the two sides in salt water or sprinkle with salt and let sit for a good 20 min. Rinse... This will make it a lot less bitter.

Scoop the meat/rice mix into the cavity of the eggplant.
If you have a grill with multiple burners, keep one of the burners off (the middle if possible). Place the eggplant onto a piece of foil and place over the burner that is NOT lit (indirect heat). Cook for at least 30min. Remove and top with some grated cheese (Parm is good, but a greek Kasseri or some hard persian cheese is better). Place back on the grill for 5-10min till the cheese melts and starts to harden up a bit.

Remove from grill.... let sit 5min and serve.

Great with a "greek" salad of tomato, cucumber, goat cheese (feta), lemon juice and olive oil.... some flatbread (pita, sangak etc) Humus, babaganush and Taziki.

Babaganush (sp?)

2-3 large eggplants sliced in half and soaked with salt (do this for ANY eggplant you ever make!!)

Wrap in foil and bake for an hour at 350.
Remove from oven and let cool
Scoop out the flesh (NO SKIN)
Place in food processor or blender with:
Garlic
Olive oil
diced parcely
lemon juice
salt
finely diced purple onion and finely diced peppers (red or green)

Blend till the desired consistency.

Made a ton of grilled eggplant the other day. Had a bunch of white and green eggplant from my fiancee's parents' grocery store (it didn't sell well, so we take it home). Peeled the white ones. Used olive oil, garlic, rosemary, salt, pepper and a bit of lemon juice and then grilled with a bunch of other vegetables. Good stuff.
