to be more accurate, i2i on the bighit is 8.75" across the board. the difference is that the bighit III comes with a fox dhx (4.0) with 2.75" stroke, whereas the other bighits (II and I) come with a van r with 2.5" stroke.
so, monopod, if you're upgrading, an 8.75x2.75" dhx is what you should use.
no need to contact a specialized dealer. fox doesn't make a 8.75x2.5" dhx. like i said, you need a 8.75x2.75" dhx. and yes, you can put it on your bighit I. the bighit III comes with a dhx 4.0 (again, 8.75x2.75"), which means that you can put a dhx on any bighit frame (as long as it's the correct size of 8.75x2.75"), since all bighits share the same frame.
I also have Vanilla R on my '06 Big Hit. I have been thinking about to upgrade to DHX. I have had good offers with 8.5" e2e and 2.5" stroke instead of 8.75" e2e and 2.5" stroke.
What kind of effect it would have on the bike? BB would drop a little bit, but would it be very noticeable difference? I think now with Vanilla R the BB isn't very high, I'm not sure do I want to make it more lower. Althought I run my bike in slack/low position. If I would put 8.5" e2e shock on and run linkage in steep/high position, I think it would be pretty close to the same geometry as with slack position.
An 8.5 eye to eye considerable drops the BB and I would only recomend it if you like very low bikes and are using it for dh racing. 165 crank arms are a good idea, The BB ends up at around 13.4"-13.5"
