It's new, so you shouldn't need to do much. If you don't ride alot in wet/muddy conditions, just replace the seals every year.

You could change the oil, it's not that hard. You just unscrew the top caps, push the fork down till you can't push down anymore, then turn the fork upside down so the oil drains. To fill, use a measuring cup and syringe that has measurements in ml. Marzocchi lists their oil volumes in cc's which equals ml. Fill to recommended volume, then pull up on the steerer to get the fork to extend. Screw the top caps back on, cycle the fork a few times and you should be good.

The manual for my Rock Shox said to change the oil every 20 hours of riding. I asked my LBS how to do that (the manual didn't tell that part.) and he laughed. Apparently, most people I talk to don't do maintenance on their shocks, and they seem to work fine. The LBS recommended an annual overhaul, although the manager had gone years without one for his bike.

Yes, if you've put in air to set your preload, just purge it out before you take the top caps off. Use a wrench or other tool that will get a good hold of the top caps.

If you use a measuring cup, they usually don't go in small increments. ex. 50ml, 100ml, 150ml, 200ml, etc. Marzocchi lists oil volume for the 05 Dirt
jump series at 185cc's in each leg. The syringe is needed after you measure out 150ml in your measuring cup. You can pick one up at the drug store, usually the little plastic ones to give babies medicine works fine. Those are usually 5ml. You are even cooler if you can get your hands on a graduated cylinder and use that to measure out the oil.

So, just measure out your oil, then pour it into each leg. The 185ml isn't written in stone, you can experiment by adding or removing oil. It's best to do it in small steps.
