just wondering if'n any of y'all 's have parted one out before. If so how did you go about doing it?

Ive done it twice in the past. You can either strip all the parts off it ahead of time or wait until people buy a part and then take it off and ship it or whatever. Also, things like hoods, fenders, bumbers, seats, etc are a bitch to ship; atleast for me they were so i would recommend saying that those parts need to be picked up or meet people half way
