My ex used to make them with whole wheat tortillas, chopped chard, shredded carrots, slivered yellow peppers, corn, salty soft cheese (which I cannot remember the name of), with a peach/mango salsa. Change it to jack cheese and grilled talapia and you have my fish taco recipe.
I've made them with woked up enoki mushrooms, onions, garlic and tofu. Not sure if you meant mushrooms at all or raw mushrooms....
Of course fresh corn tortillas are key.
