good hot weather side dish

behind the viewfinder
made this last night. great.

- two cans of white beans (can be cannelini, navy, great northern, etc), rinsed.
- olive oil
- salt and pepper
- chopped red onion
- dashes of cumin and coriander
- chopped cilantro and parsley
- juice of one lemon

mix and serve.

if i had a cucumber, i'd have added it as well.

We're growing romano beans, cucumber, and cilantro right now. We also have a meyer lemon tree. Soon I'll be able to make a home grown version of this recipe!

Damn Californians. :mad:

My cilantro always seems to grow so bloody fast that I never get to use it. It flowers before I can harvest. :think:

So I shouldn't mention that I live in the wine country, (Sonoma county) and the temps and soil are perfect for growing a lush veggie garden in my back yard. I get a good mix of full sun and partial shade too.

Oh, and I live 5-30 minutes from every great vineyard in Napa or Sonoma.
