Muenster is a very unappreciated quality cheese.

But I have to say, I almost never like soft cheese.

Depends entirely on the drink, and type of cracker/accompaniment.

I've rarely met a good cheese I haven't liked.

I like a nice gouda or brie on occasion. IMHO theres nothing like a nice brie spread on some GOOD (ie not grocery store) french bread :drool:

Brie and Camomber (not how it's spelled I'm sure) are good for a soft cheese.

I love Blue Cheese on my salads and hard goat cheeses of some variety on my crackers. I hate soft goat cheese.

For real, I tried some horseradish havarti from the downtown farmers market that was soooo tasty. But I like many a cheese, sometimes all too well.

RTL are great. The hardcore end of softcore as it were.

I like it all, but love the stinky, in fact the stinkier the better. We had a nice Abbage de Belloc from the Loire Valley in Solvang, CA. It was so nice. In fact goat cheese may trump stinky cheese.

here are some of my earlier thoughts on cheeses back from when i went on a cheese-sampling spree:

Stilton - a blue cheese, good with fruit
Aged Gouda - i just tried some 4 year aged gouda, very hard and flavorful, not all creamy like normal gouda
Gorgonzola - another blue cheese
Roquefort - yet another. see a pattern here? ;-)
Comté - a hard cheese sitting in my refrigerator, altho i haven't tried it yet it has many fans
Camembert - like brie on steroids, in a good way
Epoisses - comes in a little wooden container. a creamy cheese, supposedly napoleon's favorite :-o , very smelly tho (air it out!)
Leydin - a hard-ish cheese, often has spices in it. not offensive like
some of the blues can be
of the above i still enjoy a good stilton, gouda, gorgonzola (on a salad, not alone), and camembert. epoisses was almost the death of me...
