Just take 64 east to Brevard-about 45 minutes from Highlands. There are some trails in Panthertown Valley in Cashiers which is only 20 minutes away on 64 east. They aren't really technical or anything, but it is a place to pedal the landrider and get some nice scenery.
You can take Hwy 107 down to Cullowhee and drive up Moses Creek Road until it turns to gravel and single car width. Drive it to the very, very top and it emptys out into the top of Wayehuta, an ATV park closed to ATVS for the winter. Push across the bank, turn left and push up the super steep trail to your left. At every intersection take a left. You'll have a few short uphills after that, and 30 minutes of Mach 4 whoops, berms and parted hair! At the bottom, turn left and coast the pavement all the way to the bottom and follow the river out to Old Cullowhee Rd. You can leave your return vehicle there. To go up Moses Creek, it's recommended you have something with standard SUV style ground clearance for a spot or two...but it's all gravel.
You might be able to get access to the DH track at headwaters near Rosman if you have an escort, but I believe its still closed to the public at this point. Other than that there are probably about 50 trails in the pisgah ranger's district outside of Brevard but all of them require pedalling or pushing at one point or another. If you look up Pilot Rock there's a legal way to shuttle it off of the parkway and its worth taking a big bike down.
