Is there some dimension or angles that go into the design of a table top?
I was at copper harbor in Michigan and was intimidated and intrigued by a trail that had about 30 table tops in a row.
I have access to a nice patch of land with a good run up and would like to build one so I can learn a new skill.
Also if someone could point me in the right direction for proper technique it would be greatly appreciated.

Start here. It's very basic but it's a start. You're looking for tip #12 and #14 to #16. I'm looking for a better set of dimensions for you.

A little hard to read but this drawing from cmc4130 gives 3 different difficulty levels.

we are snow covered now but I will post pics
a friend and I are going to piggy back on an established motocross track
we just need to bed in a hard line and build a couple of things

Make the launch ramp slightly longer than the wheel base of your bike. The table can be 7 to 9 feet for starters. The landing ramp should be about 50% longer than the wheel base of your bike. Keep the ramp angles mild to start off with. Steepen the launch ramp as you get comfortable with the jumps.
