Success always brings out the asshole in some folks. They seem to think that Money equals power and might makes right. Staff always needs to be diligent. Always. Eventually after a period of ripping folks off. Things will go sour with your suppliers and staff. And your quality will falter, the customers will disappear and the joint will close. The landlord variable will always escape me. My efforts to be a landlord have failed. If you shirk properly paying good staff. Then you will have sub par staff. Almost always. Premium priced menus require premium staff, a premium location, and enough of a dining experience to warrant a premium price.

There is a huge turnover rate here in local restaurants, not because of a lack of customers, but an inability to retain staff. This kind of behavior would likely be a death sentence to a business once word got around.
