I'd think those end caps are just pressed onto the ends. The zocchi hubs look like you would grab a hold of the end caps and pull them out. Once they are out you'll see the bearings recessed into the hub. At that point you gotta use either a bearing remover tool or create a sort of bearing remover. Getting them out will be the tricky part as they're going to be pressed in pretty snugly?
Putting them in is a piece of cake though. Makes all the time taking them out worth it. You get a threaded rod, some nuts/washers and create a sort of headset press. Place grease inbetween the bearings and the hub (so it sits into the greese) as it'll help if they ever have to be removed, sort of load the bearings onto the threaded rod and washers to protect the bearings and tighten down. I've used this method for chaning bearings and it's worked very well. Best $6 I've ever spent for bike related tools Then press those end caps back on and you're good to go.
I dunno who makes the Zocchi hubs but it does look alot similar to a hope bulb/hugi/king style of fit.
If it's the old zocchi hub (with the QR20 axle as part of the hub) just give either side of the axle a good whack, it'll pop out the other side with one bearing still attached. Just make sure you remove the end caps first (small allen key on the side, and an o-ring on the inside of the cap).....
