130mm spacing for the old 7sp MTB hubs, 135 for 8/9.

Yes you can switch between the two, I've done it many times with steel frames - most older frames being steel, and built around the 130mm spacing. If you want it done "properly" you can take it to a really good LBS and have the dropouts spread to take a 135; I don't bother with that, I just pull the stays apart a little and drop 'er in.
I've never done it with an aluminum frame though, and I'd probably be loathe to try it, aluminum is not nearly as forgiving as steel.

You could install a longer axle through the 7-speed hub, and use appropriate spacers, re-dish the wheel, blah, blah.
