Well, I have been known to put the fresh pineapple in a jug (preferably a large one with a spout on the bottom to pour drinks from) and soak it in rum for a little while. Add a dash or triplesec (optional...just adds a little citrus flavor) and you're good to go. Oh, and ginger (preferably fresh) goes great with pineapple, although I haven't tried it in drink form.
This stuff is SO good and will definitely knock you on your arse if you have too much of it. Also, if the pineapple isn't 100% ripe (and isn't all that sweet), you might need to add a little sugar to taste. Enjoy...
