Of all the seasons, Autumn (Fall for you Yanks) is the best.
It's hunting season. It's wild mushroom season. There are wine festivals. Wild food festivals. Bread festivals
The French know how to celebrate a season for sure.
Autumnal food rocks too.
Here's an example of an Autumn dish I did this season:
Poached & roasted rabbit saddles wrapped in Parma ham with ravioli of confit rabbit legs & pumpkin. Finished with sweet potato crisps & fried sage.
Served up with a white Chateauneuf de Pape. You beer geeks know nothing.
Add to all this, the days are still warm and the trails are beautiful (and empty). Riding is insanely good.
