I just got a new rear wheel and an 8 inch rotor. I have heard that you have to get some sort of special spacing? Is this true? And yes I know you have to have the adapter.

What kind of bike do you have?
You do often have to use small spacers in-between the frame and adapter to obtain the correct spacing outwards for the disc, but nothing different than having a 6" rotor.

just don't get a finger caught in there! 
Some frames aren't designed for an 8" rotor but those are mostly XC bikes...
